Please remember to cook grass fed beef "low and slow" -- a little less heat and a little slower.
Freezer to table Roast Beef
Use a 3 to 4 pound frozen roast. Rub the roast with a little bit of olive oil and then rub into the meat: 1 tsp salt 1 tsp pepper 1 tbsp dried oregano 1 tbsp dried basil 1/2 tsp red pepper flakes (can be increased or omitted) Put roast in pan. Put 2 bay leaves on top. Mince or grind 2 large garlic cloves and sprinkle on meat. Cut up 2 medium onions into thin rings put on top of roast. Cover tightly and put in the oven on 300 degrees for 4 hours. If you want to add potatoes, carrots, more onions and celery.. or any other vegetables, put them in about 2 1/2 hour after starting.
This is something we had in Italy. A great way to make a cheaper cut of meat taste great!
Osso Buco 4 Beef Shanks ¼ cup all-purpose flour 1 tbsp olive oil ¼ cup butter 2 cloves garlic chopped fine 2 med onions chopped fine 3 carrots chopped fine 2 stalks celery chopped fine 1 cup white wine 1 can beef or chicken stock 4-5 whole tomatoes chopped Salt and Pepper Rosemary, Thyme, Bay leaf Dredge shanks and brown in oil in skillet. Remove meat from skillet and add butter, garlic, onions, carrots, celery. Cook slowly until tender.Add wine, beef stock, tomatoes, salt and pepper to taste and spices.Mix well until everything is heated through. Add shanks back in. Cover pan and braise on top of stove for 1 ½ - 2 hours. Add more liquid as necessary. Remove bay leaf before serving. These should become very tender and the marrow in the bone is an extra treat. Good for you too!
2 steaks use Rib eye, KC Strip or Tenderloin Put 1 tbsp. butter per steak in a cast iron skillet Heat skillet on High. Season steaks to your personal taste and put them in the skillet for about a minute, then turn the heat down to medium. Continue to heat without turning the steaks until steaks are brown and crusty. (about 3 minutes It won't take long.) Turn steaks and reduce heat to low. Continue to cook for another 3 minutes. This should give you a medium rare steak, my favorite, You may have to cook a minute or two less or more depending on how you want your steak. This leaves a great pan sauce in the bottom of your skillet. You can stir in some wine or broth or just use it as it is.
Another way to make steak.
Heat oven to 400 degrees. Follow above directions putting steak in the cast iron skillet to brown in butter on your stove. When the first side is crusty, turn it over and put pan and all into 400 degree oven for about 8 or 9 minutes. This should give you a medium rare steak. Depending on your oven, you may have to adjust time by a minute or two. Yumm!
Use an Air Frier to make steak! The recipe is from my friend Tamara. Bring 2 fillets to room temperature. Then drizzle with some olive oil and season with salt, pepper .... whatever you like. Preheat your air fryer 375 degrees. Put them in for 6 minutes then flip for another 2- 5 minutes this depends. You need to take the temperature of the beef at 6 minutes to make sure it is what you want. 125 is rare, 135 for medium rare, 145 for medium, 155 for medium well, and 165 for well done. After you take the temperature at 6 minutes adjust the time accordingly. Very easy and fast. Time can be adjusted for more fillets.
